Atriplex nummularia, commonly known as Old Man Saltbush, is a rapidly growing shrub that serves as both a livestock grazing plant and a source of nutritious bush tucker.
Its flavorful leaves are high in protein, antioxidants, and minerals and can be used in a variety of dishes, from salads to meat and fish wraps. They can also be dried and used as an herb or sprinkle.
When harvesting, simply pluck or cut the desired amount, leaving the plant to continue growing for a continuous supply.

While Saltbush can thrive in harsh conditions such as drought, salinity, and sandy soil in its natural habitat, young plants may struggle to establish themselves in excessively dry and barren environments. To ensure the best growth, select a nutrient-rich and well-draining soil and thoroughly water the plant in the weeks following initial planting.
This Saltbush can tolerate full sun and partial shade and should be protected from severe frosts.
Its grey-green leaves, which are small and irregularly shaped (2-3cm), can grow larger and more vegetable-like in controlled hothouse conditions.
